De Bortoli Yarra Valley Estate Vineyard Cabernet Sauvignon

The parcels which make up this wine are carefully selected estate grown blocks. They have all shown pedigree over the years. These include A1, A2 (both planted in 1987), B3 (planted in 1993) & D2 (planted in 1994).
A terrific mild season, which extended right through until autumn. A slow ripening over the growing season saw great colour, flavour and tannin development. This was all achieved at moderate alcohol levels.
Deep red with a purple hue. The aromas are typical of Yarra Valley Cabernet Sauvignon showing cassis, cedar, black fruits and some leafy notes. The palate shows fine grained tannins, backed by an elegant flavour profile. A tightly coiled palate that shows restrained power. Sophisticated and fine.
Once the fruit had ripened to the desired level of flavour, tannin and acid balance, it was picked and crushed into 14t fermenters. The fruit is left on skins for between 20 and 40 days, and temperature maintained between 28 – 30 C for the extended maceration. Once the fruit is pressed, it is left to settle in tank for around a week, then racked to new and used French oak casks. After barrel maturation, the individual parcels are blended into tank, allowed to rest for a short period, then bottled.
Alc/Vol: 13.5%, pH: 3.50 TA: 6.5 g/L
The wine will continue to develop complexity and interest with good cellaring for 4-6 years.
